This is another recipe that I have wanted to post for a while. I love pasta with red sauce but sometimes I really want a creamy and delicious pasta dish. Basically avocado is the most brilliant piece of fruit EVER! I really have no idea what I would do without it. I have been using avocado a lot lately to give dishes a creamy texture like my dairy-free artichoke dip!

I started making this creamy lemon basil sauce a couple months ago and basically put it on this that and everything. It totally satisfied my desire for creamy comfort food without feeling terrible after. I had some beautiful tomatoes from our Bloomsbury Farm CSA last week and was dying to use them in a recipe and this could not have been more perfect.

I have enjoyed this sauce with spaghetti squash but you can serve it with zoodles, spaghetti squash, or gluten free noodles.

Creamy Lemon Basil Spaghetti Squash

Creamy Lemon Basil Sauce (Approximately 1 Cup)
  1. 1 Avocado (½ cup mashed)
  2. 6 garlic cloves
  3. 1 cup fresh basil leaves
  4. 1 Tbsp lemon zest
  5. 1/3 cup lemon juice
  6. ¼ cup olive oil
  7. 1/8 tsp cayenne pepper (optional)
  8. ½ tsp black pepper
  9. ½ tsp sea salt
Spaghetti Squash
  1. 2 tsp olive oil
  2. 3 cups spaghetti squash, cooked (or pasta of choice)
  3. 1 cup chopped kale
  4. 8 oz cherry tomatoes
  5. ½ tsp black pepper
  6. ½ tsp sea salt
  1. Place all of the sauce ingredients in a food processor or blender and puree until smooth.
  2. Heat a large skillet over medium-high heat and add the olive oil. Once the oil is hot add the tomatoes and sauté about two minutes.
  3. Add the rest of the ingredients and sauté for another 5 minutes. Add about ½ cup of the sauce and mix thoroughly.
  4. Serve as is or add some of your favorite protein or vegetables.
  1. You can substitute any of your favorite pasta for the spaghetti squash in this recipe.

  2. I would love to take this to a pot luck, but wondered if the avocado will make the dish brown if it’s not served immediately. It looks delicious!

  3. Lisa, the citrus in the dish helps it from turning brown quickly. It should be fine for a potluck! 🙂
