Blood Orange Chicken

This recipe was created for my Dinner Party post. It is probably one of the easiest and most delicious chicken recipes I have ever had! The cumin and the blood orange are a match made in heaven and it can be on the table in about thirty minutes!

Pan Roasted Blood Orange Chicken

Ingredients
  1. 3.5-4 lbs chicken thighs (boneless, skinless or skin on and bone in)
  2. 1 Tbsp garlic powder
  3. 1 Tbsp chili powder
  4. 1 Tbsp dried oregano
  5. 1 Tbsp cumin
  6. 2 tsp black pepper
  7. 2 tsp sea salt
  8. Zest of 3 blood oranges
  9. 1/3 cup olive oil
  10. 5-6 blood orange slices
Instructions
  1. Preheat oven to 425.
  2. Mix all the spices together with the olive oil and thoroughly coat the chicken.
  3. Place the chicken in a cast iron or dutch oven pan and place the orange slices on top.
  4. Roast for 30 minutes or until chicken temps at 165.

  2. I made this tonight (I’ve been dying to try it!) and it was DELICIOUS! My husband can’t eat red meat so I’m always trying new ways to prepare chicken so he doesn’t get bored. He LOVED it. Thank you! 🙂
