We picked up our last CSA basket for the season a few weeks ago (WAH!). We got some turnips in this basket and I have been asked by several people lately for a turnip recipe. So I decided to put together one utilizing it.

I think that basically any vegetable is delicious cooked in a cast iron and with butter which is basically what I did for this dish. I used a mandolin to get the turnips and sweet potatoes sliced so thin but you can easily use a good chef knife. It is really such a simple side but so so pretty and would be the perfect dish for entertaining or a dinner party.

Ingredients
  1. 1.5lbs sweet potato
  2. 1lb turnips
  3. 2 Tbsp olive oil
  4. 1 tsp smoked paprika
  5. 1 Tbsp fresh thyme, chopped
  6. 1 tsp sea salt
  7. 1 tsp black pepper
  8. 2 Tbsp grass-fed butter or ghee
Instructions
  1. Preheat oven to 425.
  2. Thinly slice the sweet potatoes and turnips in to about 1/8-1/4 inch slices and place them in a bowl.
  3. Toss with olive oil and seasonings and place in a circular pattern in a 10inch cast iron skillet.
  4. Cover with foil and bake for 30 minutes.
  5. Remove foil and add the cubes of butter around the skillet. Cook for approximately five more minutes and then broil on high for 3-4 minutes or until top is slightly crispy.
  6. Let it cool for a few minutes and top with more fresh thyme if desired.
