Blended Coconut Oil Coffee


When I was first diagnosed with an autoimmune disorder I was required to cut a lot out of my diet pretty drastically. A lot of my favorite things I haven’t had in almost 6 months and might not ever have again or for a long time. The one thing that I kept in my diet was coffee – caffeine and all. Yes, I could probably benefit from taking it out but it is a morning ritual that is more of a mental comfort than it is a physical comfort. Something I have learned with an autoimmune disorder is that your mental sanity is just as important as your physical health if you want to feel better.

I have reduced the amount I drink by quite a bit. I only allow myself one cup a day and I try to make it more nutrient dense by adding other stuff to it. I use canned coconut milk (lite or full-fat)  instead of the half n half that I used to use. I use coconut oil as my sweetener and I also benefit from many of its health properties. This is a super simple recipe and I just throw it all in the blender and it yields a super creamy, rich cup of coffee. You can just leave the gelatin out if you desire. A teaspoon of raw honey is also a great addition!

  1. 1 cup hot coffee
  2. 2 tsp coconut oil
  3. 1 Tbls lite or full fat coconut milk
  1. Put all ingredients in the blender and mix until combined and frothy.
  2. It should only take about 15-20 seconds. Pour into a mug and enjoy!
