I seriously love nachos but really try to not eat corn chips often. I was really excited one day when my friend Emily from Coconut Contentment posted about plantain chips. I had never had them but they sounded amazing! It seemed like Trader Joe’s was always out when I went but I finally got my hands on some about a month ago. I used them to dip in guacamole and it was magical. I seriously don’t need corn chips ever again.
On Memorial Day my husband and I took it pretty easy and decided to make nachos for dinner. I actually didn’t plan to make it a blog post but they turned out so great and I had to tell you all about it. The beauty of nachos is that you can put any of your favorite toppings on it. I’m a fan of the classic taco meat nachos. I prefer to make my own taco seasoning so I included that in the recipe. I get to control what flavors I want in it and don’t get all of the salt and preservatives from a packet.
I also included a guacamole recipe and we need to talk about that! We LOVE guacamole in our house! It is absolutely ridiculous how many avocados we go through in a week. Avocados come in all different sizes so feel free to use more or less of the ingredients that I listed. You many notice that I only listed salt as the seasoning in the recipe and I would encourage you to give it a try. I read a book a while back from Rick Bayless and he talked a lot about the flavor profile of the avocado. He explained how salt should be the only seasoning ever added to it because it pulls the flavor of the avocado and lime and really makes the flavor profile stand out. As most of you know – most guacamole recipes say to add black pepper, garlic and sometimes cumin. I decided to give it a try because I honestly just found his passion and the book very inspiring. Let me tell you – it is amazing! I will never go back to putting other spices in my guacamole. Completely life changing! So if any of you try it – please let me know what you think!
